Southbeach Diet Chicken Chili

This a great Southbeach Diet recipe for chicken chili that family and friends will love.

Ingredients:

4 chicken breasts
2 onions, chopped
6 garlic cloves, minced
8 oz. whole kernel corn
1 jalapeno pepper, minced
1/4 cup chili powder


2 tbsp. ground cumin
1 tbsp. ground oregano
1 tsp. ground coriander
1 28 can tomatoes
2 cups water
2 15 oz. cans pinto beans, drained

Directions:

Saute chicken in skillet until cooked. Shred chicken meat. Add onions to skillet and saute until opaque. Add garlic and jalapeno pepper; saute for about 1 minute. Mix in spices. Add tomatoes, corn and water.

Bring to simmer. Add beans and chicken. Simmer over low heat about 1 hour to an hour and a half, stirring occasionally. When chili is thick it is ready.
