Diabetic, gluten free recipes?
I would like to make a cake or some type of dessert needs to be easily transportable ie. cupcakes, brownies, etc however one of the people that would be eating it is diabetic she does very occasionally eat a square of chocolate, but only if feeling shaky , and another is gluten intolerant.I would ring and ask them what substitutes they use however I wanted it to be a surprise as it is for a joint birthday celebration this weekend. I know you can buy gluten free flour, but would I have to mix it with something else? And I m unsure how to make it sugar free or with low enough carbohydrates that she can eat it ?Can I just use normal recipes and substitute?Would really appreciate some help Thanks.

Can anyone give me gluten free recipes for one person?
I can no longer eat gluten wheat, barley, rye and so eating out has become a pain in the ass. Everything seems to contain gluten. I can't eat sandwiches, pasta, anything marinated, some salad dressings, hush puppies, macaroni and cheese, pancakes, etc. Even some fast food fries contain gluten. So pretty much I am stuck with salads and a few side items. As you can imagine, that gets boring. Fast.I need some gluten free recipes for one. I live by myself and don't want left overs. Also I need it to be easy to make. I've never really cooked before. When I could still eat it, I baked. That's not going to do me any good anymore. Also the ingredients have to be easy for one person to consume. A can of green beans counts as a meal for me. I can't eat that much in one sitting. When I could " still" eat gluten, a kid's meal was plenty for me. I live near a Lowe's that has a few GF items. Food Lion across the street has jack shit. There is also a Whole Foods, but it's ridiculously far away. hates being poor and celiac oh look yahoo doesn't even recognize the word. Thanks yahoo. I would adore some NONVEGETARIAN recipes. I've tried the only gluten free frozen meals Lowe's carry's, Amy's. They're nasty. They're vegetarian and contain tofu. Yes animals are sweet and have feelings yada yada yada. They taste good too and keep me from being anemic. Oh and while I'm prattling on... no seafood. KTHXBAII don't really have favorite foods, but I do have foods I cannot stand Any kind of seafood. I don't like fish taste. I will occasionally eat tuna. Lima beans Tomatoes. Strangely enough I like sauces, ketchup, etc. Just not plain tomatoes. Nuts. I'm not allergic, I just don't like them. Coconut ditto Tofu I don't mind vegetarian dishes, just no tofu.Apart from those things I'm pretty much willing to try anything. My main thing is that it has to be easy for a person shopping to make a serving for one. I don't want to get the ingredients and end up with enough food to feed a family of four.
