These are my alltime favorite cookies! CRACKERJACK COOKIES Yields around 90 cookies. Ingredients: Butter or margarine, softened1 C.250 mL Brown sugar, packed1 C.250 mL White granulated sugar1 C.250 mL Large eggs2 Vanilla extract2 tsp.10 mL All-purpose flour1 ½ C.375 mL Baking powder1 tsp.5 mL Baking soda1 tsp.5 mL Quick-cooking rolled oats2 C.500 mL Crisp rice cereal2 C.500 mL Unsweetened shredded coconut1 C.250 mL 1.Cream butter/ margarine and sugars in large bowl. Add eggs, one at a time and beat well between each addition. Add vanilla and beat until smooth. 2.In smaller bowl, combine flour, powder, and soda. Add to butter mixture in two additions, mixing until no dry flour remains. 3.Add oats, cereal, and coconut to butter/ flour mixture and mix well. 4.Roll into 1-inch (2.5 cm) balls and arrange on ungreased baking sheet. Bake at 375˚F for 7 – 9 minutes, or until golden brown. Let cool slightly before removing from baking sheet. Remove and cool completely before storing (if any last that long!).

There should be one on the back of the Quaker Oatmeal box. Raisins and nuts are optional. Some people like chocolate chips in them.

In large bowl, beat all ingredients except oats, flour and raisins with electric mixer on medium speed, or mix with spoon. Stir in oats, flour and raisins. 2.On ungreased cookie sheet, drop dough by rounded tablespoonfuls about 2 inches apart. 3.Bake 9 to 11 minutes or until light brown. Quaker Oatmeal Cookies These Quaker Oatmeal Cookies are really easy-to-make cookies and absolutely delicious. # Easy # Preparation time: 10 minutes # Cooking time: 25 - 30 minutes # Makes about 35 cookies Ingredients: # 2 cups Quaker Oats # 2 cups flour # 1 cup sugar (pale brown if possible) # 1 cup dessicated coconut # 1 teaspoon ground cinnamon # 1 teaspoon ground ginger # 10oz / 300g butter, melted You will need 2 - 3 large baking sheets. Method: 1. Heat the oven to 350° F / 180° C. 2. Mix together all the dry ingredients. Add the melted butter. Roll the mixture into balls about the size of a large walnut. This dough will be soft. 3. Place on greased baking trays allowing a lot of space for the cookies to spread. Bake for about 30 minutes, until the cookies just start to brown. Avoid burning the raisins. I would advise that you rotate your baking sheets halfway through the cooking time. 4. Remove from the oven and cool in the pan for 5 minutes. The cookies will still be quite moist when they first come out of the oven. 5. Transfer to wire racks and allow to cool completely before storing in an air-tight container.
