The good thing about chili is that it is very straightforward. You don't even need to use a recipe if you are at all familiar with cooking. When I make it, I like to use TVP (textured vegetable protein) to substitute the ground beef or whatever goes into traditional chili. If you don't have any or don't know how to use that you could buy a soy substitute (I think they go by "soy crumbles " or "meal starters "). However, that being said, you can make a delicious chili with just beans! I like to use a mix of kidney beans and Northern beans but that's up to you. (you could also use chick peas, black eyed peas, etc) Once you have your protein of choice, you season it! You need an onion, one or two fresh tomatoes or a can of diced tomatoes, maybe a can of tomato sauce, some veggie broth, garlic, diced bell peppers, and any seasonings of your choice! Sautee the onion, garlic, and pepper, add the tomatoes and sautee further, add the tomato sauce and/ or broth, add the beans towards the end (I'm assuming you are using canned) and simmer the whole thing for about 30 minutes to concentrate the flavors. And you're done! it's so easy! good luck! :)

1 tablespoon vegetable oil 1 cup chopped onions 3/ 4 cup chopped carrots 3 cloves garlic, minced 1 cup chopped green bell pepper 1 cup chopped red bell pepper 3/ 4 cup chopped celery 1 tablespoon chili powder 1 1/ 2 cups chopped fresh mushrooms 1 (28 ounce) can whole peeled tomatoes with liquid, chopped 1 (19 ounce) can kidney beans with liquid 1 (11 ounce) can whole kernel corn, undrained 1 tablespoon ground cumin 1 1/ 2 teaspoons dried oregano 1 1/ 2 teaspoons dried basil Directions Heat oil in a large saucepan over medium heat. Saute onions, carrots, and garlic until tender. Stir in green pepper, red pepper, celery, and chili powder. Cook until vegetables are tender, about 6 minutes. Stir in mushrooms, and cook 4 minutes. Stir in tomatoes, kidney beans, and corn. Season with cumin, oregano, and basil. Bring to a boil, and reduce heat to medium. Cover, and simmer for 20 minutes, stirring occasionally.

The very first (and only since) veg chili recipe i used, i found on food network's website by Emeril; it is AWESOME. Here's the link: foodnetwork.com/ recipes/ emeril-lagasse/ vegetarian-chili-recipe/ index.html *instead of fresh tomatoes, i used a 28 oz can of tomatoes (drained and chopped) and skipped on the mushrooms
