I have cooked many years so many of my recipes I have no recipe. Just make it. Chili is a simple recipe. I do use tomatoes, kidney beans, onions, green pepper, ground round, cumin and chili pepper and what ever else I may feel like at the time; like tomato sauce, etc. You can find many recipes for this on the net or in most cookbooks. try allrecipes.com

I have two that I really like, Tyler Florence's Texas Chili foodnetwork.com/ recipes/ beef-chili-recipe/ index.html and Nick Mangold's ( NY Jets) recipe Super Bowl Chili Ingredients * 2 tablespoons extra virgin olive oil * 6 strips of thick-cut bacon, diced * 1 large onion, chopped * 1 pound Mexican chorizo sausage, removed from casings * 2 pounds ground sirloin * Salt and ground black pepper * 6 large cloves of garlic, finely chopped * 1 red bell pepper, chopped * 1 orange bell pepper, chopped * 2 serrano peppers, finely chopped * 4 ribs of celery, chopped * 1 cup frozen corn * 1 tablespoon chili powder * 1 tablespoon cumin * 2 teaspoons coriander * 1 teaspoon cayenne pepper * 2 cups beef stock * 1 28-ounce can crushed tomatoes * 1 15-ounce can tomato sauce * Your favorite chili toppings Yields: 6-8 servings Preparation Drizzle oil into cast-iron pot over medium to medium-high heat. Add the bacon to the pot and brown. Remove and set it aside for later, leaving drippings in the pot. Add the onion to the pot and cook slightly. Add chorizo into the pot and crumble it with a spatula as it cooks. When the chorizo is almost done, add in the ground beef, salt, ground black pepper and garlic. Once everything is cooked, add in the peppers, celery and corn. Let the veggies sweat for a couple of minutes then add all the spices in and stir to combine. Add the beef stock, scraping up any bits off the bottom of the pot. Add the crushed tomatoes and tomato sauce, taste and adjust seasonings accordingly. Add the reserved bacon and stir to combine. Bring up to a bubble, then reduce to a simmer. Let the pot simmer and serve when ready (the longer the simmer the better). Garnish with your favorite chili toppings, like parsley, shredded cheddar cheese and a good helping of hot sauce.

I usually just throw in whatever im craving at the time. it usually looks something like this: 2-3 chicken breats, cooked and diced 1 big can of diced tomatoes 2 can kidney beans 1 can v8 tomato juice 1 onion (sometimes i throw it in the pan when the chicken is cooking) crushed red pepper cyan pepper chilli pepper very simple to prepare, and tastes awesome! you can vary the spices to make it taste way differently. but im a huge fan of the cyan.

My VERY simple chili recipe: Saute some chopped onions in vegetable/ canola oil in a deep pot until clear and soft but not brown. Add chopped garlic and cook for another minute. (You can also put chopped green or yellow peppers in at with the onions.) Pour into the pot: 2 cans of tomatoes (including the liquid) 1 can of beans (kidney are my fav) 1/ 2 - 1 small can of green chili peppers (optional) Add the following spices: Salt Cumin Chili powder Cayenne pepper (all to taste) Cook for about 15 minutes. If the water is evaporating too quickly, add another can of tomatoes or a little water. You can top with cheese, or you can cook some noodles in the mix for a "chili-mac " thing. Easy but good!

LARRY’S CHILI 2 cans Hunts Special Sauce, or two cans diced tomatoes (I haven’t been able to find Hunts Special for a long time) 1 can tomato paste 2 Lb. Ground beef, not lean, grease is needed for cooking but will be drained off. 1 Tablespoon olive oil 1 can Kidney beans 1 can Black beans 2 medium onions, chopped coarse, I like to use one red onion & 1 bunch green onions. 1 cup Heinz Ketchup 1 Tablespoon Hershey powdered cocoa. Yes, you read that correctly!! 2 Tablespoon Chili Powder. I use pure chili powder, does not have cumin in it. (Don’t go cheap here, buy the best you can find, makes a huge difference in the taste) 1 clove Garlic chopped fine 2 Jalapeno or Serrano peppers, remove seeds & chop fine 6-8 drops Tapatio Sauce. (this is a hot pepper sauce WITHOUT vinegar) available in the Mexican department at the grocery. This ingredient is the place to “tune” the heat in the chili. Use more or less Tapatio, NOT more or less chili powder.
