A delicious and healthy Weight Watchers watergate salad that is only 3 PointsPlus per serving.

Ingredients:

1 pkg. (1 oz.) JELL-O Pistachio flavor fat free sugar free instant pudding
1 can (8 oz.) crushed pineapple in juice, undrained
1 cup vanilla low-fat yogurt
2-1/2 cups thawed Cool Whip Free Whipped Topping, divided

Directions:

Mix dry pudding mix, pineapple and yogurt in large bowl with whisk until well blended. Stir in 2 cups Cool Whip.

Refrigerate 1 hour.

Serve topped with remaining Cool Whip if desired.

Makes 8 (1/2 Cup Servings)

Cracker Barrel Carrot Cake

Ingredients:Cracker Barrel Carrot Cake

3 cups flour
2 tsp. baking powder
2 tsp. baking soda
2 tsp. ground cinnamon
1 tsp. ground nutmeg
1/2 tsp. ground cloves
1/2 tsp. salt

WET INGREDIENTS:
1 1/4 cups vegetable oil
1 1/2 cups sugar
1/2 cup brown sugar
3 eggs
2 tsp. vanilla

ADDITIONS:
2 cups finely shredded carrots
1 cup crushed pineapple (one 8 oz can with juice)
3/4 cup finely chopped English walnuts
1/2 cup finely shredded coconut
1/2 cup raisins (soaked in water until plump and drained)
Cream Cheese Frosting (recipe follows)
1/2 cup chopped pecans (for garnish)

Directions:

Preheat oven to 350 degrees F. Grease and flour a 13×9-inch baking pan.

Mix together dry ingredients and set aside.

In large bowl mix with beater mix oil, sugars, eggs and vanilla until smooth and fluffy. Stir in carrots, pineapple, walnuts, coconut and raisins and combine well. Gradually add dry ingredients half at a time until blended through. Pour batter into prepared pan.

Bake at 350 degrees F for about 40-50 minutes (do the toothpick test). Set cake in pan on wire rack to cool.

When cool, frost with Cream Cheese Frosting and sprinkle with pecans.

Sharp Cheddar Lasagna

Sharp Cheddar Lasagna

A quick and delicious recipe for sharp cheddar lasagna can be made in only 30 minutes from start to finish.

Ingredients:

1 pkg. (14 oz.) Kraft Deluxe Macaroni & Cheese Dinner Made With 2% Milk Cheese
1/2 lb. extra-lean ground beef
2 large green pepper, chopped
1 cup spaghetti sauce
1/2 cup 2% Milk Shredded Sharp Cheddar Cheese

Directions:

Heat oven to 400ºF.

Prepare Dinner as directed on package. While Macaroni is cooking, brown meat with peppers in large skillet; stir in spaghetti sauce.

Layer half each of the Dinner and meat mixture in 8-inch square baking dish. Repeat layers. Top with cheddar.

Bake 15 min. or until heated through.
